I trained at Ballymaloe Cookery School, Co Cork, S Ireland in the late eighties, continuing my journey I worked in the world renowned Ballymaloe Hotel, gaining invaluable experience from the wonderful Myrtle Allen in all sections of the kitchen. Learning the importance of good quality local seasonal ingredients which are paramount to the flavour of all my dishes.
After this I travelled around Europe and further afield, broadening my culinary knowledge, returning to Ireland and England cooking in private houses, restaurants and outside catering companies
In the Spring of 2018 Apple Charlotte was born, creating bespoke menus for all events from Weddings, Christenings, Birthdays and private parties.
I now have a wonderful team of staff who enable Apple Charlotte to cater for all occasions!
